Yummy grilled cheese potatoes




1. Preheat the oven to 400 F (200 C).
2. Scrub the potatoes clean.
3. Using a sharp knife, make slices across the potato, being sure to stop before you reach its bottom.
4. Slice the butter and Parmesan.
5. Next, open the potatoes’ crevices and shove the Parmesan and butter, alternating between the two.
Tip: It helps to put butter in freezer for a while before cutting it.
6. Transfer the potatoes onto an oiled baking sheet and drizzle a little oil on top of the potatoes.
7. Season with salt and garlic powder. You can be quite generous with salt.
8. Bake for about 60 minutes.
9. After about 45 minutes, remove the baking sheet from the oven. Drizzle cream over the top and top with grated cheese. Any cheese you like.
10. Return the baking sheet to the oven for the last 15 minutes.

And there it is, the precious little baby.

You can serve it with a dollop of sour cream, it makes a nice flavour combo.

We had nasty visitors...

Oi, it's been a hectic few weeks, but this was worst! 2 weeks ago a Puff adder decided to come visit our humble abode, and  came too close to the house, so the dogs decided to tear him apart, luckily for me none of the dogs got bitten. And then... a week ago this fella rocked up, a Mozambiquan spitting cobra! The dogs alerted Dad but by then 3 of them had spit in the eyes! They kept fighting and although the lower part of the snakes' body was torn, hubby had to be fast to get the head smashed, since it was still standing up and attacking. Such a pity that we had to kill them, but there was no way to capture them for later release. So, back to my furr-babies, 3 of the six had swollen eyes that were rolling back. They were checked for bites, but fortunately were only spat at. I was seeing visions of bells on my other dogs to lead my 3 blind ones. But....we gave all 3 high doses of antihistamine and I treated the eyes with kefir! We kept this up every hour and by the next day their eyes were returning to normal. We checked the eyes and kept up with the treatment and after 3 days all eyes were back to normal. Boy oh boy, I started planting malva and nasturtium and rosemary along the edge of our yard. I don't want the snakes to come in here, since I want neither the dogs nor the snakes getting hurt! Phew, close call. Mother Goddess was good for us. Be blessed, my homestead!

Never underestimate the power of "One"




A little over 30 years ago, a teenager named Jadav “Molai” Payeng began burying seeds along a barren sandbar near his birthplace in north eastern India’s Assam region to grow a refuge for wildlife. Not long after, he decided to dedicate his life to this endeavor, so he moved to the site where he could work full-time creating a lush new forest ecosystem. Incredibly, the spot today hosts a sprawling 1,360 acre of jungle that Payeng planted single-handedly.

It all started way back in 1979 when floods washed a large number of snakes ashore on the sandbar. One day, after the waters had receded, Payeng , only 16 then, found the place dotted with the dead reptiles. That was the turning point of his life.

“The snakes died in the heat, without any tree cover. I sat down and wept over their lifeless forms. It was carnage. I alerted the forest department and asked them if they could grow trees there. They said nothing would grow there. Instead, they asked me to try growing bamboo. It was painful, but I did it. There was nobody to help me. Nobody was interested,” says Payeng, now 47.

While it’s taken years for Payeng’s remarkable dedication to planting to receive some well-deserved recognition internationally, it didn’t take long for wildlife in the region to benefit from the manufactured forest. Demonstrating a keen understanding of ecological balance, Payeng even transplanted ants to his burgeoning ecosystem to bolster its natural harmony. Soon the shadeless sandbar was transformed into a self-functioning environment where a menagerie of creatures could dwell. The forest, called the Molai woods, now serves as a safe haven for numerous birds, deers, rhinos, tigers, and elephants — species increasingly at risk from habitat loss elsewhere.

Despite the conspicuousness of Payeng’s project, Forestry officials in the region first learned of this new forest in 2008 — and since then they’ve come to recognize his efforts as truly remarkable, but perhaps not enough.

“We’re amazed at Payeng,” says Assistant Conservator of Forests, Gunin Saikia. “He has been at it for 30 years. Had he been in any other country, he would have been made a hero.”

It was their habit to finish the day by sitting under the tree, looking at the clouds and discussing their day. Now I carry on the habit and it makes us both know that the day is done, time to relax and enjoy the time when Day hands over to Night.

Creamy Rice Pudding

Creamy Rice Pudding 
-from "school and home cooking" 1920 


•1 quart milk 
•1/3 cupful rice
•1/2 teaspoonful salt
•1/3 cupful sugar
•grated rind of 1/2 lemon

Wash rice; put it and all the other ingredients into a buttered pudding dish. Bake in a slow oven (250 degrees F.) until firm. This usually takes three hours. While baking, stir the mixture occasionally.

If desired, one half cupful of raisins may be added to the mixture, and 1 teaspoonful vanilla or 1/4 teaspoonful nutmeg may be substituted for lemon rind.

We moved to our wonderful smallholding 3 years ago, and guess who was so pleased that a nature loving new family arrived! The frogs are not disturbed here, and since no poisons are used in the house or out in the garden, the have a royal time. We now have babies, and 3 generations( I think) of frogs come and go as they please! Amazing if you think they share the land with 6 dogs! :-)
